It has been heard from the local people of Varanasi that Banarasi Malai was first prepared centuries ago in the Pakka Mahal of Chaukhamba. Later this recipe reached Chaukhamba Gopal Temple and then gradually the sellers learned to sweeten this unique milk.
The Making of Malaiyo
To make Malaiyo, first, the milk has to be boiled and kept on the terrace, and in the morning the same milk is churned like lassi is churned. After churning, sugar and cardamom are added to it.
Although in many places in Banaras, you will find Malaiyo which are being made by copying, here in comparison to Shreeji Sweets & Milk Malaiyo, others’ Malaiyo are not becoming as tasty.
